Xanthan gum is a polysaccharide produced by the fermentation of sugar under the action of bacteria. It differs in this respect from other gums, extracted from plant compounds or algae. It has a strong thickening power. As with other gums, gastrointestinal discomfort can be caused by heavy consumption or in combination with other gums (bloating, flatulence, laxative effect). The use of E415 is prohibited in certain confectionery products because of the risk of choking, especially for children and the elderly.
